My favorite simple-but-bougie appetizer, for when guests are coming.

Whip up some anchovy creme fraiche (anchovies and oil, lemon juice, sour cream, and cream cheese), put it on top of a hash brown, add a dollop of caviar or roe, and sprinkle chives over it. Delightful. I could eat a thousand of these.
